Noma — René Redzepi's restaurant in Copenhagen's Christianshavn district, operating from 2003 to 2024 (with a hiatus in 2012–2013 for a Tokyo pop-up and rebuilding) — is the most influential restaurant in the history of contemporary gastronomy: ranked first in the World's 50 Best Restaurants list in 2010, 2011, 2012, 2014, and 2021, awarded three Michelin stars, and credited with the origination or popularisation of New Nordic Cuisine (the philosophy of using exclusively Scandinavian ingredients, foraged and fermented, with the menu changing four times annually by ingredient category — game and forest, seafood, and vegetables), whose principles subsequently restructured the entire global fine-dining industry's approach to regional sourcing, fermentation, and the relationship between cuisine and landscape.
